I didn’t actually realize that there were so many variations to key lime pie recipes until we set out on our Florida Keys trip with the intent of trying it everywhere we could. If you start googling, you’ll see lots of varied tales of lime pie and key lime refrigerator pie and sailors making pies… While nobody can decided once and for all where the very first key lime pie recipe came from and who specifically should get the credit, everyone knows that it’s a staple in the Florida Keys and all around the state. I love talking about the history and origins of Key Lime Pie. And my version is just as delicious, although probably not as fancy. Guess what? It was way easier to make than I expected. Nothing is as satisfying after a day of kayaking in the Florida Keys than delicious key lime pie. Publix (the grocery store) sells a really delicious one and nobody feels like they can or need to top it.įor me, after going on a week-long adventure through the Florida Keys and actually trying and testing more than 20 pies, I found the best Key Lime Pie in Key West and the Florida Keys and then had to find a way to recreate it for my own family. And it’s funny, but as you talk to Floridians about key lime pie they really do all seem to love it… but nobody ever makes their own. Then you refrigerate for a few hours to let everything firm back up. Then you pour your creamy filling into the shell, and spread it around to even things out.Īnd sprinkle the remaining lime zest on top. This is where softened cream cheese is key! No worries, though! A few minutes with the mixer will make it creamy like this. Once you have everything in there, you are going to beat it with a mixer. I added about 2/3 of that zest to the mixing bowl (eye-balling it), and I reserved a little to sprinkle on top later. Plus, you will want the zest of one of them. (□□A citrus juicer is very helpful for this.) This was the juice of two large-ish limes for me. You want to use about 1/3 cup of lime juice. I just add the softened cream cheese to a mixing bowl and pour everything over top. The filling is super simple to make, and it only has three ingredients: cream cheese, sweetened condensed milk and lime juice + zest. It’ll still taste good, though, speaking from experience. If it is still chilled, your filling will be a little lumpy. Mine sat out for about 2 hours in a 75 degree house, and it was perfect. You will want to let your cream cheese come to room temperature. You’ll need to zest 3 or 4 of them, instead of just 1. □□♀️ Tip 2Īlso, I do not use true key limes, but just regular limes.□□♀️ To me, the difference in taste is minimal and doesn’t justify all the extra work of juicing all those key limes.īut feel free to use actual key limes if you prefer. You can make a homemade crust if you insist, but in the spirit of chill and easy I used a store-bough graham cracker crust. □□□This recipe is perfect to make on vacation at the lake or the beach.Īnd if you prefer lemons, you make want to make my no bake lemon cheesecake instead.
